Here’s a simple recipe for a hearty, filling breakfast that can be enjoyed in the comfort of your home or easily taken with you to eat on the road. It can also keep you on track with your diet by being made low fat by simply using egg whites and low fat cheese. You can also get creative by adding your own twist on what you put in the “cups” by adding your favorite veggies and herbs.
While the oven is pre-heating, arrange your ingredients in the muffin tins.

Like I said, this recipe is super easy! Simply place a thin slice of smoked ham in a regular sized muffin tin, crack an egg and sprinkle a little cheese of choice on top. Bake at 350 degrees for 15-20 minutes or until egg is fully cooked through. Top with a sprinkling of parsley and you’re ready for breakfast!
