Growing up, this was one of my favorite breakfast dishes. This must be a Southern thing, because when I moved to California, and mentioned this breakfast to my roommates, they all looked at me crazy! But as soon as I made it, they all fell in love, and constantly asked me to make this again and again. What am I talking about? Buttery, crispy whole grain bread with and egg fried in it, also known as “egg in a basket.” I’ve made different versions of this by adding cheese or salsa and avocados, but you can’t go wrong with the original recipe. It’s so simple, hearty, and can be portable as long as you don’t cook the egg over-easy.
It’s so easy to make… just cut a hole in the middle of a piece of bread… I use a lid or cookie cutter. Butter a frying pan and set bread in. Crack open an egg into the opening, and fry it up to your liking.
