Sometimes, we just need a donut. Hot little puffs of sweet perfection. Mmmmmmm. I like donut holes because they’re more portable and I like to tell myself I’m consuming less calories than I would be eating an entire donut. Ha ha ha. My kids love them as well. So, one day after school I came up with this easy recipe. Here’s a slightly tropical twist on a Saturday morning standard.
- 1 c. coconut sugar
- 2 eggs, beaten
- 1 c. milk
- 1 tsp. vanilla
- 3 c. flour
- 1/4 tsp. salt
- 2 tsp. baking powder
- Coconut oil for frying
- Cinnamon sugar (to taste)*
Mix together everything but the coconut oil and cinnamon sugar. Drop by teaspoon into hot coconut oil. Fry until brown. Drain. Roll in sugar and cinnamon while still warm (just toss them in a clean brown paper lunch bag). Alternately, donuts may be dusted with powdered sugar.
*To make cinnamon sugar, combine 1/2 cup granulated white sugar with 1 tsp. cinnamon.
