Recently, blackberries were .88 a carton, so naturally I grabbed as many as my hands could hold. We’ve been eating them with yogurt, oatmeal, fresh out of the carton… we were blackberried out… but we still had a few left that I didn’t want to go to waste. I checked my freezer and noticed I still had a large amount of peaches I froze this past Summer. So I got to work. The sweetness of the peaches with a touch of honey combines so well with the juicy tartness of the blackberries. We’ve continued to enjoy our blackberries, just in different form, and I hope you will as well.
You’ll need:
- 12 oz. fresh blackberries, rinsed and drained
- 2 large peaches cut and skins removed
- 1 cup sugar
- 1 cup water
- 1 tbs. honey
- 1 tbs. lemon juice
Directions:
Put all ingredients in a medium pot and let cook away on medium heat. Turn down heat to low once it starts to boil. Simmer for another 10 minutes. Let cool, then pour into blender. Blend until pureed and add to a mason jar or other container. Place in fridge to cool and enjoy!
