Anyone else get in those prepping moods? We try to prep foods for the week on Sunday evenings, but we got a tad behind and that didn’t happen… life, ya know.

This morning I put together some freezer English muffin breakfast sammies. Bacon or ham and a cracked egg in a muffin tin for 15-20 minutes at 350° …you can also use a sausage patty or omit the English muffin and just have ham like I’ve done in the past, click here for recipe. Whatever floats your boat.

I added a slice of cheese to ours. Great for a crowd or to keep in the freezer.

Tip for freezing: wrap each of the sammies in a paper towel before putting them in a freezer bag so they hold their shape in the freezer. Simply reheat in the microwave for 30 second increments until warmed through for a quick, hearty breakfast.
