These are our favorite peanut butter cookies we’ve enjoyed over the years, I’m surprised I haven’t shared about them yet!
Super simple recipe with only 4 ingredients needed. Also, no flour so if you or a loved one have an intolerance, these are a wonderful cookie alternative.

Ingredients:
• 1 cup sugar
• 1 cup peanut butter
• 1 egg
• 1 tsp vanilla extract


Directions:
Preheat oven to 350⁰. Mix together ingredients in a bowl until smooth.

Roll into balls and place on a parchment or reusable silicone lined baking pan.

Press a criss cross pattern on each ball pushing down the dough on the baking sheet.

I like to sprinkle a little extra sugar on top of each cookie before baking – it gives them a little more texture.
Bake at 350⁰ for 10-12 minutes. Take out of oven and let rest on cooling rack approximately 10 minutes before serving.
