Some weeks we go through bananas quickly, others, well they sit around and get brown, thus requiring another tasty use for them.


This is a quick recipe to whip up before the kids wake up or to have ready for a nice brunch with coffee or tea.


Ingredients for muffins:
- 3 Bananas, smashed
- 1 cup sugar (I prefer coconut sugar)
- 1/2 cup softened salted butter
- 2 large eggs
- 2 tsp. Vanilla
- 2 cups flour
- 1/2 cup sour cream
- 1 tsp. Baking powder
- 1/2 tsp. Baking soda
- 1/2 cup chopped walnut pieces

Streusel:
- 1/4 cup cold salted butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 cup flour
- 1 tsp. Cinnamon
- 1/4 cup walnut crumbles
Mix muffin ingredients in a bowl while the oven preheats to 350⁰. Scoop batter into buttered or lined muffin tins and sprinkle the Streusel mix on top. Bake for 20 minutes. Let cool for 10 minutes before scooping out of muffin tins.



That’s it. Total time is about 40 minutes to have a scrumptious Streusel muffin at your fingertips.
