
Gluten Free Banana Muffins with Cream Cheese Frosting
- 2 cups 1:1 GF flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 Tsp salt
- 3 ripe bananas – mashed
- 2 large eggs
- 1/2 cup melted butter
Optional: dark chocolate chips or chopped walnuts (we did half and half)

Preheat oven to 350⁰ – in a bowl, mash bananas, then combine eggs, butter, and vanilla. Sift in dry ingredients and incorporate. Pour into buttered or lined muffin tins. Sprinkle on chocolate chips or walnuts or both. Bake for 20-22 minutes.

Cream Cheese Frosting – with a hand or stand mixer, combine 8 oz softened cream cheese, 1/2 cup softened salted butter, 2 cups powdered sugar and 2 tsp. vanilla. Whip until combined and smooth. Let the muffins cool approx. 10 min. before frosting.
