Blueberries and Cream Crumble Pie

Some of my family members love blueberry pie, then there’s some of us who love creamy custard pies. We can all agree on a love for crumble.

So, to combine them all and make everyone happy, here we are with this deliciously sweet + tart, creamy pie with a lovely crumble.

Ingredients:

• 1 pre-made pie shell

• 1 cup white sugar

• 1/2 cup all-purpose flour

• 1/2 cup sour cream

• 2 large eggs

• 1/2 tsp. Vanilla extract

• 2 cups fresh blueberries

• 1 tbs. Lemon zest

Crumble:

• 4 tbs. Butter, melted

• 1/2 cup brown sugar

• 1/4 cup all-purpose flour

• 3/4 cup quick oats

Directions:

Pre-heat oven to 350⁰. In a bowl, combine white sugar, flour, sour cream, vanilla, lemon zest and eggs. Whisk until smooth. Gently fold in blueberries. For crumble – combine butter, brown sugar, flour and oats. Pour blueberry mixture into pie shell. Sprinkle crumble mix on top. Bake for 55-60 minutes or until set. Let cool for approximately 1 hour before serving.

I’ve also made this by adding mixed berries and it came out just as lovely. So if you’d like, you can opt for just blueberries or a combination – either way, it’s delicious!
