Easy Peasant Bread

Peasant Bread… An easy, and somewhat quicker bread to make for sandwiches, for toast, or just to snack on with butter and jam.

When I first baked it, we already downed almost an entire loaf in a day! So, obviously I now like to double my recipe to have enough bread for multiple purposes throughout the week.

For 1 loaf you’ll need:
+ 3 cups flour
+ 1.5 tsp sugar
+ 1.5 tsp yeast
+ 1 tsp salt
+ 1.5 cups lukewarm water
+ Olive oil to coat

In a stand mixer, add in yeast, water and sugar. Let yeast bubble by allowing to sit 10-15 minutes. Then combine flour, and salt into yeast mix using a bread hook. Let mixture sit covered it a non-drafty area to rise approximately 2 hours. Pour out onto a floured surface and knead slightly. Place in buttered or parchment lined bread pan. Let rise another hour. Preheat oven to 375⁰. Brush olive oil on top before placing in oven to bake for 45 min. Turn out onto cooling rack, slice and enjoy!
