I adore one-pot meals. Dishes pile continuously throughout the day in my home, so I’m always looking to create less mess when it comes to cooking dinner. Hallelujah for one-pot meals. Really, they’re a life-safer for this crazy-busy momma! Here’s a favorite for us, and thankfully it doesn’t take too many ingredients (or dishes, yay!) to get this meal on the table.
One-Pot Veggie Penne with Chicken and Sun-dried Tomatoes
Ingredients:
- 1 heaping cup spinach
- 4 oz cream cheese (half of package)
- 1/2 bag Trader Joe’s sun-dried tomatoes
- 2 medium chicken breasts, cubed
- 32 oz chicken broth split in half (16 oz to start with and 16 oz to gradually add in later)
- 1 12 oz box veggie penne
- Oil for cooking (olive or avocado oil)
- 2 tbs. Italian seasoning
- salt and pepper to taste
- grated parmesan to serve
Start off by cooking chicken sprinkled with Italian seasoning and a few dashes of salt and pepper in skillet drizzled with oil
Once chicken is a nice golden color, add in sun-dried tomatoes
Add in 16 oz chicken stock, cream cheese and penne and cover to let simmer for approximately 10 minutes or until pasta is al dente. Gradually stir in remaining chicken stock and cover. Cook an additional 5 minutes. Once pasta is cooked through, add in spinach and cover once more for another 5 minutes.
Serve with a sprinkling of parmesan and extra salt if you desire. Bon a petit!
