It may be Winter, but in California we have days that feel like Spring or Summer that like to pop up when it’s suppose to be chilly. On these warmer days, I like to make lighter meals. Here’s a quick dish that everyone in my house loves. Individual BBQ chicken pizzas made with Naan bread. I try to keep my freezer stocked with Naan because it’s so yummy as a side to soup and so versatile you can use it to make your own mini pizzas.
- 6 pieces of frozen Naan bread
- 1/2 cup BBQ sauce
- 1 cup shredded or balled mozzarella cheese
- 1/2 cup chopped cilantro
- 1/2 cup chopped red onion
- 1/2 cup minced garlic (optional)
- 1 cup shredded, cooked chicken breast
- olive oil
Preheat oven to 350 degrees. On a cookie sheet (or two) lay out Naan. Drizzle olive oil and sprinkle minced garlic all over the Naan. Drizzle BBQ sauce. Top each piece with mozzarella, chicken, red onion and cilantro. Put in oven for approximately 10 minutes or until edges are golden.
