
One of our favorite easy Summer meals… Mexican Street Corn Pasta Salad… Honestly, no measurements for this one, so go with God, and I was missing a couple things so I improvised, but here are the basics…


*Spiral pasta noodles
*Mayonnaise
*Queso fresco
*Jalapeño sauce
*Cherry tomatoes
*Roasted frozen corn mix
*Red onion (missing in video)
*Lime (missing in video)
*Salt + pepper + garlic mix
*Cilantro or parsley
*4-5 small avocados
*TJ’s Everything But The Elote seasoning



Cook noodles according to package… Slice tomatoes, add parsley or cilantro, and diced red onions (if you have them). Steam corn and let cool. Mix together a dollop of mayo, squeeze of jalapeño sauce and a squeeze of lime. Mix in corn and sprinkle of salt mix and Elote seasoning.

Combine drained and cooled pasta noodles with corn mixture, onions and tomatoes. Gently mix in diced avocado and queso fresco. Let sit in fridge to cool for approx. 20-30 minutes before serving. Enjoy!
