Pumpkin Banana Walnut Bread

Welp, it’s Fall… While the weather is still acting like it’s Summertime, I’m trying my best to make it Fall-like in my home in hopes the weather will catch on… Fingers crossed! With that, I’m baking and making meals that go along with the season, including incorporating pumpkin in my baked goods.

I had some bananas on their way out of existence and needed to use them fast, so I thought, why not make a Fall-like bread? Thus, we have this goodness…

Here’s what you need to make it…

Ingredients:

• 2 ripe bananas mashed

• 1 can pumpkin purée

• 1 stick butter room temp

• 2 eggs

• 1/2 cup sugar

• 1/2 cup brown sugar

• 1 tbsp vanilla

• 1 tsp pumpkin pie spice

• 1 tsp cinnamon

• 2 cups flour

• 1 tsp baking soda

• 1/2 tsp salt

Optional: 1/2 cup crushed walnuts

Preheat oven to 350⁰. Sift dry ingredients together in a large mixing bowl. Add wet ingredients and mix until combined. If adding walnuts, fold in last. Pour into a buttered or parchment-lined bread pan.

For Streusel Topping:

• 1/2 cup crushed walnuts

• 1/4 cup flour

• 1/4 cup brown sugar

• 1/4 tsp salt
• 6 tbs unsalted butter melted + cooled so that it’s warm but not hot to the touch (if you only have salted butter, use that and omit the 1/4 tsp salt)

To make the streusel, grab a medium-sized bowl, whisk or stir together flour, brown sugar, granulated sugar, and salt. Drizzle the butter over the dry mixture and use a fork to combine the ingredients together until mixed, and still slightly clumpy. Lightly fold in the walnuts, if using. Sprinkle over bread batter before placing in the oven.

Bake at 350° for 60-75 minutes or until a toothpick comes out clean. Let sit for 5-10 minutes before slicing to cool a bit. Serve with butter and a tall glass of cold milk.
