Simple Pancake Mix

This is an easy pantry staple to have ready for those Saturday morning pancakes. It’s simple, with only 5 ingredients for the mix, and minimal ingredients to make the pancakes.

For mix:

• 8 cups AP flour (you can also substitute with 1:1 Gluten Free flour)

• 1/4 cup sugar (I use coconut sugar)

• 2 Tbsp. baking powder

• 1 Tbsp. baking soda

• 1 Tsp. salt

Combine ingredients in a bowl and whisk together.

Use a funnel to put in a storage jar.

To make pancakes:

• 1 1/2 cup mix

• 1 cup milk

• 1 lg egg

• 1 dash vanilla extract
Optional – a couple dashes of ground cinnamon (my kids love it)

That’s it! Simple, easy pancakes that contain far less ingredients than many of the boxed brands. Enjoy!
