Cinnamon Crunch Banana Bread

Deliciously warm and filling, with just enough crunch and sweetness. This cinnamon Crunch banana bread has walnuts and dark chocolate morsels and is made with whole wheat flour, so you can say it’s somewhat healthier and have yourself another slice… believe me, you’re going to anyway!

Ingredients:

• 2 large eggs

• 2-3 overipe bananas, mashed

• 3/4 cup sugar

• 1/3 cup oil (I prefer coconut)

• 1/2 cup Greek yogurt

• 2 cups whole wheat flour

• 2 tsp. ground cinnamon

• 1 1/2 tsp. baking powder

• 1/4 tsp. salt

• 1/2 cup walnuts

• 1/2 cup dark chocolate chips

For Crumb Topping:

• 1/2 cup flour (regular)

• 1/2 cup brown sugar

• 1 tsp. cinnamon

• 1/4 cup cold butter chunks

Instructions:

Preheat oven to 350 degrees. Butter 2 loaf pans. Prepare crumb Topping by mixing dry ingredients and working in chunks of cold butter with your hands until it crumbles – don’t overwork and melt the butter. Set aside in fridge to keep chilled. Mix remaining ingredients in a separate bowl. Pour into battered pans and evenly sprinkle crumb topping over batter. Bake 50-60 minutes or until toothpick comes out clean. Let rest approximately 10 minutes before slicing.
