Yes, you read that right… It’s bulletproof! Coconut oil in your coffee. Coconut oil is one of the few foods that can be classified as a “superfood.” Its unique combination of fatty acids can have profound positive effects on health. The medium chain triglycerides in coconut oil have been shown to increase 24 hour energy expenditure by as much as 5%, potentially leading to significant weight loss over time. The fatty acids and breakdown products in coconut oil can kill harmful pathogens, potentially helping to prevent infections. With all these benefits, and more, I’m sold! But, I’m not much of a fan of eating coconut oil by the spoonful. Recently, I’ve been reading up more on the Paleo diet and treating Candida overgrowth. I’ve seen a ton of information regarding cutting out sugar in your diet. EEEEK! I’ll be honest, I LOVE my sugar with coffee and cream. So, I’m slowly, but surely trying to LIMIT my sugar intake. I just can’t go cold turkey! So, here’s my recipe for slightly sweetening my coffee while getting some great benefits from coconut oil!

The secret is blending it into a frothy delicious cup of joe.
Ingredients for a single serving:
1 cup of organic coffee
1 tablespoon coconut oil (or more, I usually put in 2 tablespoons)
¼ tsp vanilla
a few drops of agave syrup (optional if you like it a tad sweeter)
Instructions:
Put all ingredients in a blender or food processor. Mix on high speed for 20 seconds until frothy. Drink immediately and enjoy all the energy and health benefits!
