Creamy White Chicken Lasagna

I’m all about warm, filling meals, especially the one-pot kind that require little clean up! This yummy chicken lasagna isn’t only hearty and delicious, but filled with healthy ingredients that your entire family will gobble right up. Try out this twist on the classic red lasagna, and you might even enjoy it more!

Layers

What you’ll need:

1/2 stick butter
1/3 cup whole wheat flour
1 tsp. salt
1/2 tsp. ground nutmeg
2 cups milk
1 pound cooked chicken breast, shredded
1 jar artichoke hearts
3 cups pre-washed baby spinach
1 cup shredded mozzarella / Parmesan cheese blend
2 cups ricotta cheese
1 box no-boil lasagna noodles
1 18 oz. jar Trader Joe’s garlic simmer sauce

Directions:

In a large saucepan, melt butter. Stir in milk. Gradually stir in the flour, 1/2 teaspoon salt, nutmeg and pepper until smooth. Cook and stir until thickened. Add entire jar of garlic simmer sauce and stir.

Start the layering process by first adding a heaping layer of the cream sauce.

Continue layering by adding noodles, spoonfuls of ricotta and artichoke hearts, sprinkle on cheese, chicken and spinach by the handful, then drizzle with more cream sauce before adding the next layer of noodles.

On the top layer pour remaining sauce and sprinkle with remaining cheese. Cover with foil and bake at 350° for 35-40 minutes or until bubbly and golden brown. Let stand for 10 minutes before cutting.  Enjoy!
